It does not need to come from a lab.

My favorite theory is contamination by an organic fertilizer factory worker near Wuhan when he mixed bat guano with inadequate breathing protection. Transmission was by commuter train route.

This bypasses the issue that bats are less active in winter. The bat guano could have been harvested from endemic caves at an earlier time.
